The past week has been nothing but a great dreary rainy mess. It seems like weeks since we have seen a ray of sunshine. Leaves just keep falling and caking themselves to the rest of the wet junk being washed around. Now, the temperatures have dropped as well. Let’s just say some warm comfort foods are certainly hitting the spot right now.
Being a lover of all things breakfast, I am always looking for great ways to bring delicious foods into our kitchen especially if they are healthy. There’s not much of a better to warm you up first thing in the morning than a bowl of porridge. This spiced quinoa porridge hits the trifecta being healthy, delicious, and easy to make. The only catch is that you have to make it the night before, but that just makes it that much easier in the morning (when it really matters). Since, one batch lasts us most of a week, this porridge kind of has it all. Are you starting to see why we were eating it so much through our unprocessed challenge?
Spiced Quinoa Porridge
1/3 cup brown rice
1/3 cup wheat berries
1/4 cup quinoa
1/4 cup steel cut oats
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp vanilla
5 cups water
Fresh cut fruit
Almond milk or whole milk
Combine the grains and spices in a larger slow-cooker and stir everything until it’s well mixed. This step helps prevent any possible clumping later.
Pour in the water and mix everything well. Set the slow-cooker on its lowest temperature setting and leave overnight (8-9 hours).
If you happen to be awake during the cooking time, stir the porridge a time or two. It’s no big deal if you don’t though.
When the porridge is finished in the morning, stir everything well and scraping the sides and bottom. Serve with your choice of toppings. My go-to picks are honey, milk, and fresh fruit. Sorry there isn’t an image of the cooked porridge. My brain was in go-mode and I dived in without thinking to take the picture. I can promise it’s better than the above watery look.
We have stocked our fridge week after week with strawberries and all of our favorite seasonal small fruits and berries anticipating our next bowl of spiced quinoa porridge. It has become an instant classic. As easy as it is to make, I don’t see this recipe being forgotten anytime soon.
